Carne trita di manzo (anche mista), mollica di pane ammollata nel latte e ben strizzata, uova, pangrattato (da aggiungere alla fine e poco per volta per la consistenza), prezzemolo tritato, parmigiano grattugiato, cipolla tritata fine, sale, noce moscata e paprika affumicata. Per un polpettone ad ogni commensale calcola circa 200 gr di carne e 50 gr di mollica di pane.
POLPETTONE DI CARNE
600 grammi carne trita (manzo o vitellone)
150 grammi pane mollica
1 cipolla
2 uova
latte
4 cucchiai olio extravergine d'oliva
2 cucchiaio parmigiano grattugiato
1 cucchiaio prezzemolo fresco tritato
noce moscata
paprika affumicata
farina q.b
sale q.b.
pepe q.b.
Prepara il polpettone. Amalgama tutti gli ingredienti prima con il cucchiaio di legno poi con le mani inumidite. Avvolgi il tutto in un foglio di carta forno e lascia riposare in frigo per mezz'ora. Poi infarina bene su tutti i lati e dai una prima doratura in padella. Dopo di che continua la cottura in forno per 40/50 minuti. xx Stefania ◕‿◕
